The most interesting thing is that I don’t remember where I got this recipe from. But I remember very well that I bought these cookies in Krasnodar and it made an unforgettable impression on me. I strongly advise you to cook it.
“Snowdrifts” cookies will appeal to those who do not like sugary sweetness, but who like tender friability.
To enrich the taste, you can add ground nuts, raisins, cinnamon to the protein filling … I like cookies without any additives. It is so tender, fragile, like a snow crust in winter.
Butter or margarine — 100 g
Eggs — 2 pcs.
Sugar — 120 g
Sour cream — 70 g
Salt — a pinch
Flour — 200 g
Vanillin — 1 g
Powdered sugar — for sprinkling.
Step by step recipe.
To prepare the “Snowdrifts” cookies, take all the necessary products.
Chilled butter or margarine grate directly into flour. Add a pinch of salt and mix thoroughly until smooth. Add half a bag of vanillin.
Divide the eggs into proteins and yolks. Make sure that not a drop of yolk gets into the squirrels, otherwise they will then not beat as needed. Combine the sour cream with two yolks and pour into the butter-flour mixture. Knead the dough.
At the first stage, it is enough to simply collect the dough into a bowl so that all the flour and butter form a single whole. Wrap the dough in a film and put in the refrigerator for 15 minutes.
Beat the whites with a pinch of salt until a light foam is obtained. Pour in the remaining vanillin. Then, gradually adding sugar, beat the proteins to dense peaks so that when they turn over, they do not pour out and keep their shape well.
Remove the dough from the refrigerator and knead it on the table to a smoother structure, but do not zealously so as not to disturb the layering. Divide the dough into 12 identical pieces, approximately 32 grams each. Roll the balls.
Roll each ball into a cake. Mentally divide the tortilla into 4 parts and lay out a teaspoon of protein filling in the upper left corner.
Roll the cake four times. First, in half, then in half, to get a corner. Fasten the edges with a fork, leaving the inside free.
Place the blanks on a baking sheet with parchment. Bake at 180 degrees for 15-20 minutes. Navigate your oven to make cookies slightly golden.
